Super Bowl Worthy Chili

Start by mixing one Pacifico, rub, BBQ sauce and half the salt in a large bowl. Cut the top sirloin into 1/2 inch cubes trying to keep as systematical as possible, add them to the beer mixture and refrigerate for 4 hours.
Put the Guajillo peppers into a small bowl and bring 8 cups of water to a boil and pour into the bowl. Cover with a moist towel and let sit for 2 hours.
Cut the bell peppers and into 1/4 inch pieces. Quarter the mushrooms and dice the garlic.
After the meat is done marinating, add the contents of the bowl to the soup pot and bring to a boil stirring frequently until the marinade reduces. Add the onions, peppers, garlic and mushrooms to the pot. Boil for 10 minutes. Add 2 TBSP of each chili powder. Add the other Pacifico. Let boil down a bit and then add the tomatoes and black beans.
Let cook for 6 hours, add 2 TBSP of each chili powder, salt, stir and refrigerate over night. Cook for another 2 hours on low. Add 2 TBSP of each chili powder. Serve with chopped scallions, cheddar cheese and cornbread.
Pain Grillé de Gueule de Bois (hangover French toast)
Ingredients
- 1/2 lb bacon
- 6 Eggs
- 1 cup heavy whipping cream
- 2 TBSP Bailey's Irish Cream
- 1 loaf traditional Ciabatta bread
- Trader Joe's 100% pure maple syrup
Preparation

In a skillet or large pan cook bacon until crispy on both sides. Drizzle a small
amount of syrup over the bacon using a spoon. Remove the bacon from the pan onto
a plate with three paper towels to soak up the grease. Put the plate in the microwave
to heat up just before serving.
In a large flat container combine the eggs, cream and Bailey's using a medium whisk
until the mixture is one solid color.
Cut the bread into 1" slices using a serrated knife. Soak the first few slices in
the batter on both sides. Place a pat of butter in a large skillet over medium heat.
Distribute the melting butter evenly across the pan and place the batter slices
in the pan. Cook on each side until golden brown. Put the finished slices on a plate
in the oven to keep warm. Repeat with the remaining slices.
Just before serving, microwave the bacon for 15 seconds. Place two slices on each
plate with bacon. Top the slices with butter and syrup and enjoy.
